  • milk - 2 c
  • salt - 3/4 tsp
  • flour - 3 Tbsp
  • butter - 4 Tbsp
  • pepper - 1/8 tsp
  • grated cheese - 1/2 lb
  • onion, finely chopped - 1 item
  • potatoes, diced - 1 qt
  • small can pimento - 1 item

How to make pittsburg potatoes:

Boil potatoes in water with cover on for 5 minutes. Add pimento and onion and cook until tender. Drain and put in buttered dish. Melt butter in saucepan; add flour and stir. Add milk and bring to a boil. Add cheese, salt and pepper. Heat slowly until cheese melts. Pour over potatoes. Bake at 350° until brown.
