  • pkg - 1 oz
  • melted butter - 3/4 c
  • eggs, lightly beaten - 6 item
  • grated Parmesan cheese - 1 c
  • salt and pepper to taste - 1 item
  • each pkg - 2 oz

How to make spinach balls:

Do not add water to stuffing mix.

Cook spinach according to package directions and drain in sieve, pressing out as much moisture as possible with back of spoon. In medium bowl, combine spinach, stuffing mix, Parmesan cheese, eggs, butter and salt to taste. Mix thoroughly and roll into balls the size of large marbles (1 1/2-inches diameter). Place on cookie sheet and freeze. When balls are completely frozen, remove and store in plastic bag in freezer.

To Serve: Place frozen balls on cookie sheet. Bake at 350° for 10 to 15 minutes (or 7 to 10 minutes at 350° for unfrozen balls) until lightly browned. Serve hot. Makes about 80 balls.
