Southern fried chicken and gravy
Ingredients/Components
- milk - 1 c
- flour
- butter - 2 Tbsp
- hot water - 1 c
- salt and pepper to taste - 1 item
- corn oil for frying - 1 item
- young frying chicken, cut up - 1 item
How to make southern fried chicken and gravy:
Rinse and dry chicken pieces. Dredge in flour, seasoned with salt and pepper. Heat about 2-inches corn oil in a large frying pan. Add chicken to the pan and fry, covered, 5 minutes. Continue frying uncovered until that side is nicely browned. Turn chicken pieces; cover and fry 5 minutes. Remove cover and continue frying until brown. The chicken should be turned only once. Drain chicken on paper towel and keep warm while making gravy.Pour off all but about 3 tablespoons oil from the frying pan. Scrape the browned crumbs loose before adding the butter. Blend in flour and gradually add milk and water. When nicely thickened, check seasoning and add salt and pepper, if needed. Serve the gravy separately over rice or creamed potatoes. Serves 4.
