  • salt - 1 tsp
  • salad oil - 1 item
  • ground red pepper - 1/8 tsp
  • yellow cornmeal - 1/2 c
  • black pepper - 1/8 tsp
  • frozen catfish fillets or other white fish fillets, partially thawed and cut into 2 x 3-inch pieces - 1 lb

How to make southern fried catfish:

In pie plate or shallow dish, combine cornmeal, salt, red and black pepper. Dredge fish pieces in cornmeal mixture, patting to coat on all sides. In a large, heavy skillet, heat about 1/2-inch of oil to 375° or until a small piece of bread sizzles when dropped in. Add fish fillets and fry until golden brown, about 4 minutes on each side. Drain on paper towels.
