Ingredients/Components

  • all-purpose flour - 1/2 c
  • pepper - 1/2 tsp
  • salt optional - 1 tsp
  • yellow cornmeal - 1/2 c
  • vegetable cooking oil - 1 item
  • pan-dressed catfish - 2 lb

How to make southern fried catfish:

Cut fish into serving size pieces if fish fillets are large. Combine cornmeal, flour, salt and pepper. Coat fish with cornmeal mixture. Heat oil (1/2-inch) in skillet until hot. Fry fish in hot oil over medium-high heat, turning fish carefully until brown on both sides, about 10 minutes. Yields 4 to 6 servings.
