  • sugar - 3/4 c
  • salt - 1 Tbsp
  • warm water - 1 c
  • bread flour - 6 c
  • potato flakes - 3 Tbsp
  • yeast - 1 pkg
  • corn oil - 1/2 c
  • instant potato flakes - 3 Tbsp
  • starter - 1 c

How to make sourdough bread:

Bread:3/4 c. sugar3 Tbsp. potato flakes1 c. warm water To Make Bread:1/3 c. sugar1/2 c. corn oil1 Tbsp. salt1 c. starter1 1/2 c. warm water6 c. bread flour Starter: Dissolve yeast in 1/4 cup warm water; add the 3/4 cup warm water to the sugar and potato flakes. Add dissolved yeast; let set in warm place for 48 hours or until very sour. Put in refrigerator 3 to 5 days.

Bread: Mix bread ingredients. Add to starter. Let stand in warm place 8 to 12 hours. Mixture will be very bubbly. Take out 1 cup to make bread and refrigerate remaining starter for 3 to 5 days and feed again. To feed properly, use or discard 1 cup starter before feeding. Feed only 3 times, then discard. Start new after that.

To Make Bread: Mix all ingredients well. Put dough in large oiled bowl. Pat top of dough with oil. Cover lightly with foil and let stand 12 to 14 hours. Do not refrigerate. Punch down dough and knead a little and divide into 3 parts. Knead each part on a floured board (8 x 10-inch). Put into oiled loaf pans and brush with oil. Cover lightly with waxed paper and let rise 5 to 6 hours. Bake at 350° for 30 to 45 minutes. Brush tops with butter and cool on rack. Wrap well and refrigerate or freeze to store.
