Smothered okra
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1/4 Tbsp
- ground red pepper - 1/4 Tbsp
- chopped green pepper - 1/2 c
- ground black pepper - 1/8 tsp
- large onion, chopped - 1 item
- medium tomatoes, peeled and chopped - 2 item
- sliced okra or 1 10 oz - 2 c
How to make smothered okra:
In a 10-inch skillet, cook onion and green pepper in butter or margarine about 5 minutes or tender. Stir in okra, tomatoes, salt, red pepper and black pepper. Bring to boiling. Reduce heat. Cover and simmer for 30 to 35 minutes for fresh okra or about 15 minutes for frozen okra or until okra is tender. Makes 4 servings.Recipe categories: Side dish, Tomato, Greens.
