Ingredients/Components
- water
- cloves garlic, minced - 2 item
- sliced carrots
- large onion, sliced - 1 item
- black pepper to taste - 1 item
- safflower oil - 1/4 c
- crushed thyme - 1/2 tsp
- medium chicken, cut into 4 pieces and skinned 2 leg and thighs and 2 half-breast pieces; save back and wings for stock - 1 item
- fresh green peas preferably fresh
How to make smothered chicken:
In deep saucepan or Dutch oven, brown chicken parts in oil. Pour off excess oil; add onion, garlic and spices. Cover chicken with water. Cover pot and bring to a boil, then lower heat and simmer for approximately 2 1/2 to 3 hours. Add carrots and peas. Cover pot; bring back to a boil. Then lower the heat and simmer for another 20 to 30 minutes. Makes 4 servings.One serving (1 piece of chicken plus 1/2 cup of vegetables) equals 4 medium fat meats, 1 starch/bread exchange, 393 calories, 18 grams carbohydrates, 33 grams protein, 21 grams fat, 186 milligrams sodium, 101 milligrams cholesterol and 5 grams fiber.
