Ingredients/Components
- butter or margarine - 3 Tbsp
- salt - 1/4 tsp
- flour - 2 Tbsp
- lemon juice - 2 Tbsp
- pepper - 1/8 tsp
- snipped parsley optional - 1 item
- lemon slices optional - 1 item
How to make chicken scallopini:
Cut chicken breast halves crosswise into 4 pieces. Place between 2 pieces of waxed paper or plastic wrap. Pound until 1/4-inch thick.Mix flour, salt and pepper. Coat chicken. Heat butter in 10-inch skillet over medium heat until bubbly. Cook chicken in butter until light brown, 3 to 4 minutes on each side. Remove the chicken to warm platter. Stir lemon juice into skillet. Pour lemon juice mixture over chicken. Garnish with parsley and lemon slices. Makes 2 servings.
