  • cooking oil - 1/4 c
  • bay leaf - 1 item

  • large onion, sliced - 1 item

  • mustard seed - 1 tsp
  • large onions, sliced - 2 item
  • shallots, peeled - 4 item
  • carrots, scraped and sliced - 6 item
  • gingersnap crumbs - 1/3 c
  • bay leaves, halved - 3 item
  • top round or eye of round - 5 lb

How to make sauerbraten:

Marinade:2 c. white vinegar2 c. dry white wine2 c. water2 large onions, sliced6 carrots, scraped and sliced4 shallots, peeled8 peppercorns6 whole cloves3 bay leaves, halved2 tsp. salt1 tsp. mustard seed few sprigs parsley5 Tbsp. flour1 tsp. salt1/4 c. cooking oil1 large onion, sliced6 whole cloves1 bay leaf2 Tbsp. butter2 Tbsp. sugar1/3 c. gingersnap crumbs Mix 2 tablespoons flour with the salt and coat all sides of the meat. Heat the oil in a large casserole or Dutch oven. Add meat and brown well on all sides, over medium heat; will take 20 minutes or more. Remove meat and pour off all fat from the pot. Return meat to the pot and add onion slices, cloves, bay leaf and 3 cups of the marinade. Cover and simmer until meat is almost tender, about 3 hours. Remove meat and strain the marinade. Return the meat and strained marinade to the pot.

In a small skillet, melt butter; stir in sugar and remaining 3 tablespoons flour and cook, stirring constantly, over low heat until a rich brown color. Stir this mixture into the marinade. Cover and continue cooking until meat is very tender, about 1 hour. Remove meat to a heated platter.

Stir gingersnap crumbs into gravy and, using whisk, cook and stir 2 to 3 minutes, until gravy is smooth and thickened. Slice meat, not too thin; arrange overlapping slices and coat with some of the gravy. Put the remaining gravy in a sauce boat. Serve with potato pancakes or Spaetzle. Serves 12.
