Ingredients/Components

  • sugar - 1/4 c
  • salt - 1 item
  • flour - 1 item
  • water - 2 c
  • pepper - 1 item
  • peppercorns - 1 tsp
  • bay leaves - 2 item
  • large onion, sliced - 1 item
  • white vinegar - 2 c
  • rump or sirloin tip roast - 3 lb

How to make sauerbraten:

Rub surface of meat with salt and pepper and place in large bowl. Heat vinegar, water, onion, bay leaves, peppercorns and sugar together until very hot, but not boiling. Pour hot mixture over meat. Cover bowl and let stand in refrigerator for approximately 3 days, turning each day.

Remove meat and brown in pan. Add half of vinegar mixture so that liquid is about 1/2-inch deep in pan. Cover pan and simmer meat for 2 to 3 hours until tender, adding more vinegar mixture as needed.

Thicken with 1 1/2 tablespoons of flour for each cup of liquid. Best if served with sweet-sour red cabbage and potato pancakes. Mashed potatoes or noodles may be substituted for potato pancakes.
