Rice pudding
Ingredients/Components
- sugar - 1 c
- milk - 1 c
- salt - 1/4 tsp
- powdered sugar - 1 Tbsp
- raisins optional - 1/2 c
- cooked rice
- eggs, divided - 2 item
- canned cream - 1 c
- cinnamon or nutmeg optional - 1/8 tsp
How to make rice pudding:
Beat egg yolks until thick and lemon colored in a mixing bowl; add 2 tablespoons of the milk and cream mixture. Place remainder of milk and cream in a double boiler. Set over medium heat. Wash raisins and put in the milk mixture in the boiler. Cook until soft, about 15 minutes. Add rice. Cook 5 minutes longer, then stir in the yolks, salt, sugar and spice. Stir until well blended, about 2 to 3 minutes. Remove from heat. Pour into 3-quart pudding pan.Topping (if desired): Beat egg whites until stiff. Add sugar. Spread the meringue on top of pudding. Brown in 325° oven.
