  • eggs - 2 item
  • salt - 1/2 tsp
  • salad oil - 1 item
  • shredded Cheddar cheese - 1 c
  • dried bread crumbs - 3/4 c
  • cold cooked rice - 2 c

How to make rice cheese balls:

In medium bowl, combine rice, cheese, eggs, salt and 1/4 cup bread crumbs. With hands, shape teaspoonfuls into balls. Coat with remaining bread crumbs. Heat salad oil to 370°. Fry balls until golden brown. Makes 4 dozen.
