Green and gold casserole
Ingredients/Components
- eggs - 3 item
- milk - 1/2 c
- salt - 1/2 tsp
- salad oil - 2 Tbsp
- pepper - 1/2 tsp
- shredded Cheddar cheese - 1 c
- oregano - 1/3 tsp
- cracker crumbs - 1 c
- chopped parsley - 2 Tbsp
- medium onion, chopped - 1 item
- zucchini - 3/4 lb
- yellow squash - 3/4 lb
How to make green and gold casserole:
Cook onion in oil until clear-light brown. Cut squash and zucchini into cubes or disks as desired. Into browned onion, stir squash, zucchini, parsley and seasonings.Cook until tender. Transfer to bowl; add milk and eggs. Mix well. Pour half mixture into a buttered 1 1/2-quart casserole dish. Cover with cracker crumbs and cheese. Make second layer as first, ending with cracker crumbs and cheese. Bake at 325° for 40 to 45 minutes.
