  • sugar
  • vanilla - 1 tsp
  • butter or margarine - 1 Tbsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 3 c
  • oil - 2/3 c
  • baking soda - 1 tsp
  • firmly packed brown sugar
  • buttermilk or sour milk - 3/4 c
  • chopped fresh rhubarb

How to make rhubarb bread:

Topping:1/2 c. sugar1 Tbsp. butter or margarine Grease bottom only of two loaf pans. In a large bowl, combine brown sugar, buttermilk, oil and egg; blend until smooth. Lightly spoon flour into measuring cup; level off. Stir in remaining ingredients except for topping ingredients. Mix well, and pour batter into prepared pans.

In a small bowl, combine the topping ingredients. Sprinkle over batter in pans. Bake at 325° for 50 to 60 minutes or until toothpick comes out clean.
