Ingredients/Components
- zucchini, sliced - 2 c
- cherry tomatoes - 2 c
- French dressing - 1/2 c
- red onion, sliced - 1/2 c
- green pepper, cut into strips - 1 item
- peeled, cubed eggplant - 2 c
How to make ratatouille:
Combine everything except tomatoes in frying pan. Cook over low heat for 10 minutes. Add tomatoes. This can be served hot or cold. Serves 6.Recipe categories: Eggs/dairy, Cheese, Main dish.
