Ingredients/Components
- can pumpkin - 1 oz
- white enriched bread - 4 oz
- eggs - 4 med
- nonfat dry milk - 1-1/3 c
- cinnamon - 1-1/2 tsp
- baking soda - 1-1/3 tsp
- sugar
- brown sugar replacement - 2-1/2 Tbsp
- vanilla - 1 tsp
How to make pumpkin muffins:
Mix eggs, baking soda, pumpkin and vanilla together. Put rest of ingredients in separate bowl. Add dry ingredients to wet ingredients a little at a time and beat on low speed with mixer. Bake at 350° for 30 minutes. Makes 12 cupcakes. Serves 4.Recipe categories: Breads, Quick breads, Muffins.
