Ingredients/Components

  • shortening - 2/3 c
  • eggs - 4 item
  • water - 2/3 c
  • baking powder - 1/2 tsp
  • salt
  • ground cloves - 1 tsp
  • raisins or dates, chopped fine dates preferred - 2/3 c
  • sugar
  • flour
  • baking soda - 2 tsp
  • cinnamon - 1 tsp
  • nut meats, broken - 2/3 item

How to make pumpkin bread:

Cream shortening and sugar thoroughly; add eggs, pumpkin and water. Sift together flour, baking powder, soda, salt and spices; add to pumpkin mixture. Stir in nuts, raisins and dates. Pour into two 2-quart loaf pans. Bake at 350° for 1 hour. Three (1 pound) coffee cans may be used for baking.

Note: It may take longer baking in your oven, so check with toothpick to see when properly done.

This recipe tastes better after they have sat a day or two.

It also freezes well.
