Ingredients/Components
- sugar - 1 c
- egg - 1 item
- baking powder - 1/2 tsp
- dash of salt - 1 item
- cored, peeled, chopped apples - 2 c
- butter, softened - 1/2 c
- baking soda - 1 tsp
- flour
- vanilla - 1 tsp
- Sift together flour, baking soda, baking powder and salt
- cinnamon
How to make apple muffins:
Cream together sugar and butter; beat in egg. Sift together flour, baking soda, baking powder and salt. Add to egg mixture. Stir in vanilla and apples. Fill 12 to 14 muffin (2 1/2-inch) tins or cups to the top (if using tins, butter). Sprinkle with topping.Topping:1 1/2 tsp. sugar1 1/4 tsp. cinnamon Stir the dry ingredients together. Beat the egg white just until foamy. Add to the milk, along with the melted butter. Add the liquid ingredients and the zucchini to the dry ingredients, stirring just enough to moisten. Spray muffin tin with cooking spray or line 8 cavities with baking cups. Fill each of the 8 cups 3/4 full. Bake at 375° for 15 to 20 minutes.
