Ingredients/Components
- milk - 1 qt
- water - 1 1
- butter or oleo - 3 Tbsp
- large potatoes - 6 item
- parsley, chopped - 3 Tbsp
- celery, chopped - 1 c
- salt or to taste - 2 tsp
- large onion - 1 item
- pepper or to taste - 1 tsp
How to make potato soup:
Saute chopped onion in butter or oleo until tender. Do not brown. Add pared and cubed potatoes, celery, parsley, salt, pepper and water to cover vegetables by about 1 inch. Cook until tender. Mash about half of potato mix, then add the milk and reheat thoroughly. Do not boil. Great served with buttered toast.Recipe categories: Potato, Vegetables, Soups & stews.
