Potato cheese soup
Ingredients/Components
- margarine - 2 Tbsp
- chopped celery - 1/3 c
- chopped onion - 1/3 c
- diced peeled potatoes - 4 c
- chicken broth - 3 c
- milk - 2 c
- salt
- pepper - 1/4 tsp
- dash of paprika - 1 item
- shredded Cheddar cheese - 2 c
- croutons - 1 item
- fresh chopped parsley - 1 item
How to make potato cheese soup:
In a large saucepan, melt margarine over medium heat. Saute celery and onion until tender. Add potatoes and broth. Cover and simmer until potatoes are tender, about 12 minutes. In batches, puree potato mixture in blender or food processor. Return to saucepan. Stir in milk and seasonings. Add cheese and heat only until melted.
