Potato cheese soup
Ingredients/Components
- milk - 2 c
- butter or margarine - 2 Tbsp
- salt
- paprika - 1 item
- pepper - 1/4 tsp
- chopped onion - 1/3 c
- chopped celery - 1/3 c
- chicken broth - 3 c
- shredded Cheddar cheese - 2 c
- parsley - 1 item
- croutons - 1 item
- diced potatoes - 4 c
How to make potato cheese soup:
In a large saucepan, melt butter over medium-high heat. Saute celery and onion until tender. Add potatoes and broth. Cover and simmer until potatoes are tender, about 12 minutes. In batches, puree potato mixture in a blender. Return to saucepan. Stir in milk and seasoning. Add the cheese and heat only until melted.
