Ingredients/Components

  • milk - 2 c
  • butter or margarine - 2 Tbsp
  • salt
  • paprika - 1 item
  • pepper - 1/4 tsp
  • chopped onion - 1/3 c
  • chopped celery - 1/3 c
  • chicken broth - 3 c
  • shredded Cheddar cheese - 2 c
  • parsley - 1 item
  • croutons - 1 item
  • diced potatoes - 4 c

How to make potato cheese soup:

In a large saucepan, melt butter over medium-high heat. Saute celery and onion until tender. Add potatoes and broth. Cover and simmer until potatoes are tender, about 12 minutes. In batches, puree potato mixture in a blender. Return to saucepan. Stir in milk and seasoning. Add the cheese and heat only until melted. Garnish with croutons and parsley.
