Ingredients/Components

  • salt - 1/2 tsp
  • water - 1/2 c
  • pepper - 1/8 tsp
  • Worcestershire sauce - 1 tsp
  • snipped parsley - 1 Tbsp
  • ground beef - 1 lb
  • finely chopped onion - 1 Tbsp
  • uncooked long grain rice - 1/4 c
  • can condensed tomato soup - 1 oz
  • slightly beaten egg - 1 item

How to make porcupine meatballs:

Combine meat, rice, egg, parsley, onion, salt, pepper and 1/4 c. of the soup. Mix thoroughly; shape into about 20 small balls and place in skillet. Mix remaining soup, water and Worcestershire sauce; pour over meatballs. Bring to a boil; reduce heat, cover and simmer 35-40 minutes, stirring often.
