Ingredients/Components

  • salt - 1/2 tsp
  • water - 1 c
  • oil - 2 Tbsp
  • egg, beaten - 1 item
  • ground beef - 1 lb
  • minced onion - 2 Tbsp
  • worcestershire sauce - 1 tsp
  • long grain rice, uncooked - 1/4 c
  • can tomato soup, undiluted and divided - 1 3/4

How to make porcupine meatballs:

Combine beef, rice, egg, onion, salt, 1/4 c. tomato soup and worcestershire sauce; mix thoroughly. Form into meatballs, using about 2 Tbsp. mixture in each one. Brown meatballs in hot oil. Add remaining tomato soup and water. Cover and let simmer about 40 minutes or until rice is done. Yield: About 2 dozen meatballs.
