  • coconut - 1/2 c
  • heavy cream - 2 Tbsp
  • lemon juice - 2 Tbsp
  • butter or oleo - 1/2 c
  • corn meal - 2 Tbsp
  • small can pineapple, drained - 1 item

How to make pineapple coconut chess pie:

Combine eggs, sugar and butter. Beat 5 minutes at high speed. Add remaining ingredients and blend thoroughly. Pour into unbaked pie shell and bake in 325° oven for one hour or until golden brown.
