Ingredients/Components

  • sugar
  • vanilla - 1 tsp
  • butter or margarine - 1/4 c
  • salt - 1/4 tsp
  • can crushed pineapple, drained - 1 1/2
  • cornmeal - 3 Tbsp
  • large eggs, lightly beaten - 4 item
  • pie crust - 1 item
  • can flaked coconut - 1 1/2

How to make pineapple coconut chess pie:

Combine first 3 ingredients in large bowl; add eggs and vanilla. Stir until blended. Stir in butter, coconut and pineapple. Pour in crust. Bake at 350° for 1 hour or until set. Cover with aluminum foil after 40 minutes.
