  • salt - 1 tsp
  • water - 1/4 c
  • all-purpose flour
  • shortening Crisco - 2/3 c

How to make pie pastry:

Combine 1 2/3 cups flour and the salt in medium-size bowl. Add shortening; work into flour by rubbing rapidly between fingers until mixture resembles peas.

Combine 1/3 cup flour and the water to make a paste. Add to flour mixture, stirring until dough almost cleans side of bowl. Gather dough into a ball. Wrap securely in waxed paper. Refrigerate until cold, about 3 hours.

Divide dough in half. Roll 1 portion of dough on lightly floured surface into circle 2-inches larger than inverted 9-inch pie plate. Ease pastry into pie plate, allowing dough to hang over edge. Reserve remaining dough for top crust.
