Peanut soup
Ingredients/Components
- salt - 1/2 1
- creamy peanut butter - 1/2 c
- medium onion, chopped - 1 item
- uncooked rice - 1/4 c
- medium carrots, sliced - 2 item
- Tabasco pepper sauce - 1 tsp
- chicken or beef stock - 1 qt
- large leek with 2 inches off top, chopped - 1 item
- 1-inch piece dried red hot chili
How to make peanut soup:
Combine the first 4 ingredients in a heavy 2 to 3-quart saucepan. Bring to a boil. Cover and simmer 30 minutes. Remove from heat and puree until smooth. Return soup to saucepan and add rice, chili and salt. Bring to a boil. Simmer, covered, 15 to 20Recipe categories: Soups & stews, Bisques/cream soups, Nigerian.
