Ingredients/Components

  • flour - 2 Tbsp
  • chopped onion - 1/2 c
  • chicken broth
  • can whole kernel corn, drained - 1 oz
  • chopped parsley - 1/4 c
  • thyme - 1/2 tsp
  • potatoes, cubed - 1 lb
  • celery slices - 1/2 c
  • light cream or milk - 1 c
  • salt and dash of pepper - 1/2 tsp
  • sliced carrot rounds - 1 c
  • grated Swiss or Jack cheese - 2 c

How to make potato chowder:

Combine half the potatoes with broth in saucepan with tight fitting lid. Bring to boil; simmer until potatoes are tender when pierced with a fork, about 10 minutes. Mash potatoes with a fork. Stir in remaining potatoes, carrots, corn, celery, onion
