Oatmeal-raisin muffins
Ingredients/Components
- cinnamon - 1/4 tsp
- milk - 1 c
- brown sugar - 1/2 c
- baking powder - 3 tsp
- egg - 1 item
- shortening - 1/4 c
- sifted flour - 1 c
- raisins - 1/2 c
- white sugar - 1/4 c
- quick-cooking rolled oats - 1 c
How to make oatmeal-raisin muffins:
Sift together flour, baking powder and 1/2 teaspoon salt; cut in shortening until like coarse crumbs. Stir in rolled oats. Combine egg, milk and brown sugar; beat well. Stir into dry ingredients; add raisins. Spoon into paper bake cups in muffin pans. Combine white sugar and cinnamon; sprinkle over batter. Bake in 425° oven for 15 to 20 minutes.
