  • cinnamon - 1/4 tsp
  • milk - 1 c
  • brown sugar - 1/2 c
  • baking powder - 3 tsp
  • egg - 1 item
  • shortening - 1/4 c
  • sifted flour - 1 c
  • raisins - 1/2 c
  • white sugar - 1/4 c
  • quick-cooking rolled oats - 1 c

How to make oatmeal-raisin muffins:

Sift together flour, baking powder and 1/2 teaspoon salt; cut in shortening until like coarse crumbs. Stir in rolled oats. Combine egg, milk and brown sugar; beat well. Stir into dry ingredients; add raisins. Spoon into paper bake cups in muffin pans. Combine white sugar and cinnamon; sprinkle over batter. Bake in 425° oven for 15 to 20 minutes. Makes 12.
