Oatmeal-raisin muffins
Ingredients/Components
- granulated sugar - 1/4 c
- milk - 1 c
- salt - 1/2 tsp
- brown sugar - 1/2 c
- baking powder - 3 tsp
- shortening - 1/4 c
- quick cooking rolled oats - 1 c
- raisins - 1/2 c
- sifted all-purpose flour - 1 c
- ground cinnamon - 1/4 tsp
- egg or 2 egg whites - 1 item
How to make oatmeal-raisin muffins:
Sift together flour, baking powder and salt. Cut in shortening until mixture is like coarse crumbs. Stir in rolled oats. Combine egg, milk and brown sugar; beat well. Stir into dry ingredients; add raisins. Spoon into paper baking cups in muffin pans. Combine granulated sugar and cinnamon; sprinkle over batter. Bake in a 425° oven for 15 to 20 minutes.
