Ingredients/Components

  • granulated sugar - 1/4 c
  • milk - 1 c
  • salt - 1/2 tsp
  • brown sugar - 1/2 c
  • baking powder - 3 tsp
  • shortening - 1/4 c
  • quick cooking rolled oats - 1 c
  • raisins - 1/2 c
  • sifted all-purpose flour - 1 c
  • ground cinnamon - 1/4 tsp
  • egg or 2 egg whites - 1 item

How to make oatmeal-raisin muffins:

Sift together flour, baking powder and salt. Cut in shortening until mixture is like coarse crumbs. Stir in rolled oats. Combine egg, milk and brown sugar; beat well. Stir into dry ingredients; add raisins. Spoon into paper baking cups in muffin pans. Combine granulated sugar and cinnamon; sprinkle over batter. Bake in a 425° oven for 15 to 20 minutes. Makes 12 muffins.
