Oatmeal-raisin cookies
Ingredients/Components
- vanilla extract - 1 tsp
- egg - 1 item
- plus 2 tsp - 1/3 c
- plus 1 tsp - 1 Tbsp
- uncooked quick oats
- dark raisins, chopped - 2 Tbsp
- each baking soda and ground cinnamon - 1/8 tsp
- each firmly packed light brown sugar and sweet whipped butter, softened - 2 Tbsp
How to make oatmeal-raisin cookies:
Preheat oven to 350 degrees. In small mixing bowl combine flour, oats, raisins, baking soda, and cinnamon, set aside.Using electric mixer on medium speed, in medium mixing bowl, beat together brown sugar, butter, granulated sugar, and margarine until light and fully; add egg and vanilla and continue beating until combined. Stir in oat mixture.
Spray nonstick cookie sheet with nonstick cooking spray and drop dough by tablespoonfuls onto sprayed sheet, forming 12 cookies and leaving a space of about 2 inches between each. Bake until cookies are lightly browned and crisp, 8 to 10 minutes.
Yield: 4 servings, 3 cookies each.
