Mushroom soup
Ingredients/Components
- salt - 1 tsp
- butter - 1 Tbsp
- cornstarch - 1 tsp
- water - 1 Tbsp
- whipping cream - 2 c
- bay leaf - 1/2 item
- fresh mushrooms - 1 lb
- parsley, chopped - 1 Tbsp
- ground pepper
- juice of 1/2 lemon
- chicken stock
- dried thyme - 1/4 tsp
- shallots or green onions, minced - 2 Tbsp
How to make mushroom soup:
Finely chop mushrooms, then combine with lemon juice. Melt butter in large skillet. Add shallots and saute. Add mushrooms, bay leaf and thyme. Cook, stirring frequently, until liquid completely evaporates.Blend in cream, chicken stock, salt and pepper and bring to a boil. Reduce heat. Dissolve cornstarch in water. Add to soup and simmer 20 minutes. Ladle into heated bowls and sprinkle with parsley. Serves 6.
