Minestrone soup
Ingredients/Components
- vegetable oil - 1 Tbsp
- chopped onion - 1 c
- chopped celery - 1 c
- clove minced garlic - 1 item
- cans crushed whole tomatoes - 2 oz
- water - 4 c
- sliced carrots - 1 c
- can kidney and/or green beans - 1 oz
- medium diced potato - 1 item
- dried basil - 3/4 1
- dried oregano - 1/4 1/2
- salt and pepper to taste - 1 item
- uncooked elbow macaroni - 1 c
How to make minestrone soup:
Heat oil in soup pot. Add onions, celery and garlic. Cook until soft, about 3 minutes. Add remaining ingredients except macaroni. Simmer covered for 25 minutes. Add macaroni and simmer an additional 15 minutes. Yield: 12 (1 cup) servings.Recipe categories: Vegetables, Soups & stews, Italian.
