Ingredients/Components

  • vegetable oil - 1 Tbsp
  • chopped onion - 1 c
  • chopped celery - 1 c
  • clove minced garlic - 1 item
  • cans crushed whole tomatoes - 2 oz
  • water - 4 c
  • sliced carrots - 1 c
  • can kidney and/or green beans - 1 oz
  • medium diced potato - 1 item
  • dried basil - 3/4 1
  • dried oregano - 1/4 1/2
  • salt and pepper to taste - 1 item
  • uncooked elbow macaroni - 1 c

How to make minestrone soup:

Heat oil in soup pot. Add onions, celery and garlic. Cook until soft, about 3 minutes. Add remaining ingredients except macaroni. Simmer covered for 25 minutes. Add macaroni and simmer an additional 15 minutes. Yield: 12 (1 cup) servings.
