Minestrone soup
Ingredients/Components
- sugar - 1 tsp
- eggs - 2 item
- salt - 2 tsp
- water - 6 c
- dash of pepper - 1 item
- ground beef - 1 lb
- bread crumbs - 1/2 c
- carrots - 2 c
- black pepper - 1 tsp
- large onion, chopped - 1 item
- celery - 1/2 c
- ground pork - 1 lb
- medium potatoes, cubed - 4 item
- large cans whole tomatoes - 2 item
- cans cut green beans, strained - 2 item
- can whole kernel corn, strained - 1 item
How to make minestrone soup:
Put first 9 ingredients in large pot and put on stove to simmer. While pot is simmering, prepare the following: Mix together ground beef and pork, eggs, bread crumbs, salt and pepper. Roll into small 1-inch meatballs; add to boiling pot on stove. Simmer 30 minutes, then add green beans and corn. Simmer another 10 minutes.Recipe categories: Vegetables, Soups & stews, Italian.
