Ingredients/Components
- water - 4 qt
- frozen peas - 1 pkg
- bay leaf - 1 item
- salt and pepper to taste - 1 item
- large onion, chopped - 1 item
- stalks celery, chopped - 2 item
- chopped cabbage - 2 c
- large carrots, chopped - 4 item
- beef - 3 lb
- can chickpeas - 1 item
- leaves parsley - 4 item
- can crushed or whole tomatoes - 1 item
- spaghetti noodles, broken - 1/4 lb
- cut frozen string beans - 1 pkg
How to make minestrone soup:
In water, put beef, carrots, parsley, celery, onion and bay leaf and simmer, uncovered, for 3 hours. Remove beef and carrots and strain. Combine remaining ingredients. Cook, covered, for 45 minutes.
