Ingredients/Components

  • water - 4 qt
  • frozen peas - 1 pkg
  • bay leaf - 1 item
  • salt and pepper to taste - 1 item
  • large onion, chopped - 1 item
  • stalks celery, chopped - 2 item
  • chopped cabbage - 2 c
  • large carrots, chopped - 4 item
  • beef - 3 lb
  • can chickpeas - 1 item
  • leaves parsley - 4 item
  • can crushed or whole tomatoes - 1 item
  • spaghetti noodles, broken - 1/4 lb
  • cut frozen string beans - 1 pkg

How to make minestrone soup:

In water, put beef, carrots, parsley, celery, onion and bay leaf and simmer, uncovered, for 3 hours. Remove beef and carrots and strain. Combine remaining ingredients. Cook, covered, for 45 minutes. Cut up beef in small pieces. Makes 3 1/2 quarts of soup.
