  • salt - 2 tsp
  • boiling water - 1 c
  • shortening - 2 Tbsp
  • chili powder - 2 tsp
  • medium onion, finely chopped - 1 item
  • canned tomatoes - 1 c
  • medium green pepper, finely chopped - 1 item
  • uncooked regular white rice - 1 c

How to make mexican rice:

Wash and dry rice between towels. Heat shortening in heavy skillet over medium heat (325° to 350°) on controlled burner. Add onion. Cook, stirring frequently, until rice is browned and onion is tender. Add remaining ingredients. Cover and bring to a boil; reduce to low heat (175° to 200°). Cook for 30 minutes. Makes about 6 servings.
