Mexican rice
Ingredients/Components
- salt - 2 tsp
- boiling water - 1 c
- shortening - 2 Tbsp
- chili powder - 2 tsp
- medium onion, finely chopped - 1 item
- canned tomatoes - 1 c
- medium green pepper, finely chopped - 1 item
- uncooked regular white rice - 1 c
How to make mexican rice:
Wash and dry rice between towels. Heat shortening in heavy skillet over medium heat (325° to 350°) on controlled burner. Add onion. Cook, stirring frequently, until rice is browned and onion is tender. Add remaining ingredients. Cover and bring to a boil; reduce to low heat (175° to 200°). Cook for 30 minutes.
