Mexican rice



Ingredients/Components
- water - 1/2 c
- chili powder - 1 tsp
- can stewed tomatoes - 1 1/4
- olive oil - 1 Tbsp
- ground cumin - 1/2 tsp
- medium onion, chopped - 1 item
- cloves garlic, chopped - 2 item
- sea salt - 1/2 tsp
- rice - 1 c
- picante sauce - 2 Tbsp
- vegetable broth - 1/2 c
How to make mexican rice:
In saucepan, saut garlic and onion with the olive oil until they are tender. Add stewed tomatoes, broth, picante sauce, chili powder, cumin and sea salt. Bring to a boil. Stir in rice and water. Cover and reduce heat to a simmer. Simmer about 20 minutes or until the liquid is absorbed.To Serve: May sprinkle each serving with soy cheese, a spoonful of guacamole and soy sour cream.
