  • salt - 3 tsp
  • vinegar - 2 Tbsp
  • dry mustard - 2 tsp
  • clove garlic - 1 item
  • cayenne - 1/8 tsp
  • onion slices - 6 item
  • slices bacon - 6 item
  • sweet pickle juice - 1/2 c
  • coffee - 1/4 c
  • bacon fat - 4 Tbsp
  • dried kidney beans or 4 c - 2 c

How to make mexican bean pot:

Boil beans 2 minutes and soak 1 hour or overnight. Fry bacon half done; add fat to bean water and boil gently 2 hours. Drain. Mix all ingredients except bacon, coffee and onion. Bake 1 hour in 350° oven. Pour coffee over beans, bacon and onion slices. Bake 20 minutes longer at 400°.
