Mexican bean pot
Ingredients/Components
- salt - 3 tsp
- vinegar - 2 Tbsp
- dry mustard - 2 tsp
- clove garlic - 1 item
- cayenne - 1/8 tsp
- onion slices - 6 item
- slices bacon - 6 item
- sweet pickle juice - 1/2 c
- coffee - 1/4 c
- bacon fat - 4 Tbsp
- dried kidney beans or 4 c - 2 c
How to make mexican bean pot:
Boil beans 2 minutes and soak 1 hour or overnight. Fry bacon half done; add fat to bean water and boil gently 2 hours. Drain. Mix all ingredients except bacon, coffee and onion. Bake 1 hour in 350° oven. Pour coffee over beans, bacon and onion slices. Bake 20 minutes longer at 400°.Recipe categories: Meat, Ground beef, Beef.
