Luscious lemon pie
Ingredients/Components
- sugar - 1/2 c
- vanilla - 1/2 tsp
- sour cream - 1/2 c
- butter
- cornstarch - 1 Tbsp
- water - 1/4 c
- pinch of salt - 1 item
- egg - 1 item
- lemon juice - 1 Tbsp
- grated lemon rind - 1/2 tsp
- egg yolk - 1 item
- lemon rind
- cream cheese, softened - 8 oz
- prepared graham cracker pie crust - 1 item
- lemon, sliced paper thin for garnish - 1 item
How to make luscious lemon pie:
Topping:1/4 c. sugar1 Tbsp. cornstarch pinch of salt1/4 c. water1 egg yolk1/2 tsp. grated lemon rind1 Tbsp. lemon juice1 1/2 tsp. butter1/4 tsp. vanilla1 lemon, sliced paper thin (for garnish) Preheat oven to 375°. Place cream cheese in medium mixing bowl; beat in sugar until fluffy. Beat in egg; add sour cream, lemon rind, lemon juice and vanilla. Pour into crust and bake for 20 minutes or until filling is set. Cool completely on a cake rack. When cool, glaze with topping. Serves 6.Topping: Mix sugar, cornstarch and salt in a small pan; stir in water. Beat egg yolk into the sugar mixture. Cook over low heat, stirring constantly, until mixture thickens and boils for 3 minutes. Remove from heat; stir in lemon rind, lemon juice, butter and vanilla. Cool. Spread over pie.
