Ingredients/Components
- egg - 1 item
- sugar - 2/3 c
- flour
- baking powder - 2 tsp
- salt - 1/2 tsp
- milk - 1/3 c
- corn oil - 3 Tbsp
- vanilla - 1 tsp
- blueberries - 1 c
- cinnamon - 1/2 tsp
- Add sugar gradually
- water - 2 c
- grated lemon rind - 1 Tbsp
- cornstarch - 2 Tbsp
- butter - 4 Tbsp
- lemon juice - 3 Tbsp
How to make blueberry cake:
Topping:2 Tbsp. sugar1/2 tsp. cinnamon Beat egg well. Add sugar gradually. Add alternately dry and liquid ingredients. Fold berries into batter. Pour into a greased 8-inch square pan. Sprinkle on topping. Bake in preheated oven at 400° for approximately 40 minutes. Cool in pan on rack. Serve with Lemon Sauce.Lemon Sauce:1 c. sugar2 c. water1 Tbsp. grated lemon rind1/2 tsp. salt2 Tbsp. cornstarch4 Tbsp. butter3 Tbsp. lemon juice Mix and stir sugar, cornstarch and water over medium heat until thick and smooth.
