  • egg - 1 item
  • sugar - 2/3 c
  • flour
  • baking powder - 2 tsp
  • salt - 1/2 tsp
  • milk - 1/3 c
  • corn oil - 3 Tbsp
  • vanilla - 1 tsp
  • blueberries - 1 c
  • cinnamon - 1/2 tsp
  • Add sugar gradually
  • water - 2 c
  • grated lemon rind - 1 Tbsp
  • cornstarch - 2 Tbsp
  • butter - 4 Tbsp
  • lemon juice - 3 Tbsp

How to make blueberry cake:

Topping:2 Tbsp. sugar1/2 tsp. cinnamon Beat egg well. Add sugar gradually. Add alternately dry and liquid ingredients. Fold berries into batter. Pour into a greased 8-inch square pan. Sprinkle on topping. Bake in preheated oven at 400° for approximately 40 minutes. Cool in pan on rack. Serve with Lemon Sauce.Lemon Sauce:1 c. sugar2 c. water1 Tbsp. grated lemon rind1/2 tsp. salt2 Tbsp. cornstarch4 Tbsp. butter3 Tbsp. lemon juice Mix and stir sugar, cornstarch and water over medium heat until thick and smooth. A double boiler is best. Add, when cooked and still hot, the butter, lemon rind, lemon juice and salt. Serve warm or cold.
