Ingredients/Components

  • graham cracker crumbs - 2 c
  • sugar - 3/4 c
  • cream cheese
  • eggs - 3 item
  • vanilla - 2 tsp
  • sour cream
  • salt - 1/4 tsp
  • butter - 1 Tbsp
  • cornstarch
  • water - 3/4 c
  • melted butter - 6 Tbsp
  • lemon juice - 1/4 c
  • white sugar - 1 Tbsp
  • ground cinnamon - 1/2 tsp
  • lemon rind - 2 tsp
  • egg yolk, well beaten - 1 item

How to make cheesecake:

Cake Filling:1 1/2 lb. cream cheese3/4 c. sugar3 eggs1/4 c. lemon juice2 tsp. lemon rind2 tsp. vanilla Topping:2 c. sour cream3 Tbsp. sugar1 tsp. vanilla Glaze:1/2 c. sugar1 1/2 Tbsp. cornstarch1/4 tsp. salt3/4 c. water1/3 c. lemon juice1 egg yolk, well beaten1 Tbsp. butter Preheat oven to 350°. Combine crust ingredients. Press crust on bottom and sides of buttered 10-inch spring-form pan. Bake 5 minutes and cool.

Beat cheese until soft. Add sugar and blend well. Add eggs, one at a time, beating well after each. Mix in lemon rind and the vanilla. Add to the mixture. Pour into the prebaked crust. Bake 35 minutes.

Combine topping ingredients and spread on top of cheesecake. Return to oven immediately. Bake 10 to 12 minutes and remove from oven.

Combine dry glaze ingredients; add liquid glaze ingredients. Cook over low heat until thick. Add 1 tablespoon butter. Cool and spread this glaze on the cake before the glaze thickens too much. Always use room temperature everything in making this cheesecake.
