  • sugar - 3/4 c
  • eggs - 3 item
  • vanilla - 2 tsp
  • pkg - 3 oz
  • sour cream - 1 c
  • butter or margarine - 1 Tbsp
  • cornstarch
  • water - 3/4 c
  • lemon juice - 1/4 c
  • grated lemon rind - 2 tsp
  • egg yolk - 1 item
  • prepared extra serving graham cracker crust - 1 item

How to make lemon glazed cheesecake:

Glaze:1/2 c. sugar1 1/2 Tbsp. cornstarch3/4 c. water1/3 c. lemon juice1 egg yolk1 Tbsp. butter or margarine1 tsp. grated lemon rind Beat cream cheese until soft. Add sugar, blending thoroughly. Add eggs, one at a time, beating until blended. Mix in lemon juice, rind and vanilla. Pour into prepared crust. Bake at 350° for 35 minutes.

While cheesecake is baking, blend sour cream, sugar and vanilla. When cheesecake is done, gently spread mixture on top. Let set while glaze is being prepared.

To prepare glaze, mix sugar and cornstarch in 1-quart saucepan. Combine water, juice and egg yolk. Add to sugar mixture. Cook over low heat, stirring constantly, until mixture comes to slow boil and is thickened. Add butter and lemon rind. Allow to cool slightly. Gently spread on cheesecake before glaze sets. Chill before serving.
