Ingredients/Components

  • salt
  • water - 3 qt
  • salad oil - 1/4 c
  • clove garlic, minced - 1 item
  • chopped celery - 2 c
  • large onions, chopped - 2 item
  • diced, cooked ham - 3 c
  • lentils, washed - 1 lb
  • red hot pepper sauce - 1 tsp
  • frozen spinach 10 oz - 1 pkg
  • Polish sausage, cut into 1/2-inch pieces - 1/2 lb

How to make lentil soup:

Heat oil in a large pot. Brown garlic. Add ham, sausage and onion. Cook for 5 minutes. Add celery, lentils, water, salt and hot sauce. Bring to a boil. Cover and reduce heat to low and simmer 24 hours. Add chopped spinach. Cook 10 minutes. Makes 4 quarts.
