  • flour - 3 Tbsp
  • melted butter - 1/4 c
  • slightly beaten egg yolks - 3 item
  • stiffly beaten egg whites - 3 item
  • juice of 1 lemon
  • 9-inch pie crust - 1 item

How to make lemon sponge cake:

Blend butter with sugar and flour; add egg yolks, lemon juice and peel and milk. Fold in egg whites. Pour into 9-inch pastry-lined pie pan. Bake in hot oven (450°) for 8 minutes, then in moderate oven (325°) for 25 minutes. Like my mother used to bake.
