  • sugar - 1 c
  • milk
  • salt - 1/3 tsp
  • flour - 1 Tbsp
  • eggs, separated - 3 item
  • lemon juice - 1/3 c
  • butter, melted - 1 Tbsp
  • rind of 1 lemon

How to make lemon sponge:

Beat egg yolks until thick. Add lemon. Mix sugar, flour and salt; add to egg mixture. Stir in melted butter and milk. Fold in stiffly beaten egg whites. Put in 10-inch pie pan. Bake in hot oven at 450° for 10 minutes, then at 350° for 20 minutes.
