Ingredients/Components

  • sugar - 1 c
  • salt - 1/8 tsp
  • flour - 1/4 c
  • melted butter - 2 Tbsp
  • lemon juice - 5 Tbsp
  • stiffly beaten egg whites - 3 item
  • milk, scalded
  • grated rind of 1 lemon
  • well beaten egg yolks - 3 item

How to make lemon cups:

Combine sugar, flour, salt, and butter; add lemon juice and rind. Add to combined egg yolks and milk; mix well. Fold in whites and pour into greased custard cups. Bake in a pan of hot water in moderate oven (325°) for 45 minutes. Can be baked in greased shallow baking dish. Serves 8.
