Ingredients/Components

  • sugar
  • vanilla - 1/2 tsp
  • salt - 1/3 tsp
  • butter - 1 Tbsp
  • cornstarch - 1/3 c
  • cold water - 1/2 c
  • boiling water - 1 c
  • lemon juice - 1/3 c
  • grated rind of 1 lemon
  • large or 3 small eggs - 2 item
  • Meringue:2 to 3 egg whites

How to make lemon meringue pie:

Meringue:2 to 3 egg whites6 Tbsp. sugar1/2 tsp. vanilla Filling: Grate the rind of 1 lemon, squeeze 1 or more lemons to make at least 1/3 cup of juice, add to grated rind. Separate the eggs, mixing the yolks with the lemon juice. (Put whites aside for the meringue.) Combine sugar, cornstarch and cold water. Mix thoroughly. Add boiling water and cook slowly over direct heat stirring constantly. When it thickens and begins to bubble, remove from heat and add mixture of egg yolks and juice. Return to heat and cook until it bubbles again. Remove from heat and add salt and butter, pour into baked pie shell.

Meringue: Beat egg whites until stiff, but not dry, and sugar gradually beating constantly, add vanilla pile lightly on filling. Bake at 325° for 15 minutes until firm and delicately browned.
