  • sugar - 1 c
  • salt - 1/4 tsp
  • flour - 2 Tbsp
  • butter - 1 Tbsp
  • cornstarch - 3 Tbsp
  • egg yolks - 3 item
  • boiling water - 2 c
  • lemon juice - 6 Tbsp
  • grated rind of 1 lemon
  • pastry shell, baked - 1 item
  • recipe for meringue - 1 item

How to make lemon pie:

Mix half the sugar with cornstarch, flour and salt. Add lemon rind. Add boiling water slowly, stirring constantly. Cook in heavy pan or double boiler, continuing to stir until thick and clear. Mix remaining sugar with egg yolks and lemon juice; add to first mixture. Cook 2 minutes longer until thick and smooth. Add butter. Cool.

Pour into baked shell. Cover with meringue. Bake in moderate oven. Makes 1 eight-inch pie.
