Ingredients/Components

  • sugar
  • vanilla - 1/2 tsp
  • salt - 1/4 tsp
  • butter - 2 Tbsp
  • cornstarch - 4 Tbsp
  • boiling water - 2 c
  • lemon juice - 1/2 c
  • beaten egg yolks - 4 item
  • grated rind of 1 lemon
  • Place over medium heat and boil until it thickens

How to make lemon pie:

Mix together cornstarch, sugar and boiling water and stir well. Place over medium heat and boil until it thickens. Add butter, egg yolks, salt, lemon juice and grated rind of lemon. Cook three minutes, then pour into a baked shell. Cover with meringue and brown.Meringue:4 egg whites1/4 tsp. salt6 Tbsp. sugar1/2 tsp. vanilla Beat egg whites and salt until frothy. Whites will whip fluffier if they're at room temperature. Beat in sugar one tablespoon at a time. Beat until meringue is stiff and glossy. The meringue is ready for the pie when the sugar has dissolved and the meringue is stiff enough to hold a point, but still looks moist. Add vanilla. Beat only enough to blend. Swirl meringue lightly on pie; seal to edge of crust. Bake in moderate oven, 350°, for 15 minutes.

My mother-in-law, Irene Jollief, frequently made this lemon pie. It is excellent. She always made birthday cakes for members of the family, but for me, she always baked this lemon pie.
